Gluten free baking can be tough. There is no shortage of gluten free flours and flour blends available on the market. Many have unique tastes and baking qualities, making finding just the right combination difficult. Those with gluten intolerance or Celiac Disease often resign that baked goods will just have to taste “funny” or “earthy”, and that’s the trade off for living gluten free.
